Does anyone know whether the Gemini Ultra model will be available in Google AI Studio in the future? If so, can anyone give an estimate on when this will happen?

Unless there has been an official announcement of a date or time frame that they will do something - Googlers aren’t allowed to “give an estimate” on when or if they might do so. Which means that anyone who does is speculating.
gemini-1.5-pro-preview-0514 seems to be better than 1.0 ultra on vertex ai.
but yeah gemini-ultra is available on gcloud for some people.
